Royal Icing Recipe

Welcome to my first blog post, my royal icing recipe! I am so glad you’re here!
If you’re like me, you don’t like to read all of the extra fluff at the beginning of a blog post, you just want the information. So, I’ll keep this one short and sweet.
Below you will find the tried and true Royal Icing recipe that I use to create all of my custom sugar cookies. I included links to all of the items that I use from Amazon.

Royal Icing Recipe - Single Batch (frosts about 2 dozen cookies)
3 T meringue powder
4 Cups (1 pound) powdered sugar
6 T water (I use this to measure out my water)
1 tsp vanilla extract (always use clear to ensure your icing is pure white)
½ tsp almond extract or emulsion (always use clear to ensure your icing is pure white)
If you have a Kitchen Aid Stand Mixer, add all ingredients to your Kitchen Aid and mix on high (I use setting 8) for 3 minutes or until stiff peaks form.
If you do not have a Kitchen Aid Stand Mixer, add all ingredients to a large bowl and beat with a hand mixer until stiff peaks form.
That’s it, it really is that easy (and yummy)! The next step from here would be to pull out a smaller amount for flood and add water to get your desired consistency.

See a few notes below:
White food coloring: I like to add in white food coloring at this stage to ensure that my entire batch of icing is pure white.
Looking to double the recipe? Just double the quantity of each ingredient. This recipe can be tripled or quadrupled if necessary.
I definitely recommend getting a Kitchen Aid Stand Mixer if you are serious about Royal Icing, it is so easy and gets you the perfect consistency every time. My mom used to use a hand mixer and she literally went through multiple hand mixers because they kept dying on her.
Almond/Nut Allergies: You can omit the almond and replace with orange extract, lemon extract, butter extract or additional vanilla extract.
